Strawberry Pie

1 Cup Sugar                                       3 - 4 Drops Red Food Coloring
1 Cup Boiling Water                         1 Pint Strawberries, Washed, Hulled, and Halved
3 Tablespoons Strawberry Jello
3 Tablespoons Cornstarch

Mix ingredients and boil 1 minute.  Have berries cold and pie shells cooked and cooled.  Make sure to use deep-dish pie shells.

Arrange berries in pie shell and drizzle syrup over all berries.  Make sure they are coated.  Refrigerate 2 to 3 hours before serving.


Cabbage-Jello Salad

1 (3 oz.) Pkg. Lime Jell-O                                                1 (8 oz.) Can Crushed Pineapple
1 Cup Boiling Water                                                         1 Cup Chopped Cabbage
1 Cup Miniature Marshmallows                                     1/2 Cup Walnuts
1/3 Cup Mayonnaise                                                         1/2 Pint Whipped Cream

Dissolve Jell-O in boiling water.  Add marshmallows and crushed pineapple with juice.  Allow to cool thoroughly.  Add to the mixture the chopped cabbage and walnuts.  Fold in the following mixture:  1/3 cup mayonnaise and 1/2 pint whipped cream.  Chill until set.

Irish Soda Bread

4 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
3 eggs
1 pint sour cream
1 cup raisins


Preheat oven to 325 degrees F (165 degrees C). Grease two 8x4 inch loaf pans.
Mix the flour, sugar, baking soda, baking powder and salt. Add the eggs, sour cream and raisins and mix until just combined. Distribute batter evenly between the two pans.
Bake loaves at 325 degrees F (165 degrees C) for 1 hour.

Florida Orange Meringue Pie

1 - Cup Orange Juice                                         1 - Cup Orange Sections Cut Into Pieces
2 - Tablespoons Grated Orange Rind            2 - Tablespoons Butter or Margarine
1 - Cup Sugar                                                       5 - Tablespoons Cornstarch
3 - Beaten Egg Yolks                                          2 - Tablespoons Lemon Juice

Combine orange juice, orange sections, grated orange rind, sugar, and cornstarch.  Cook on low heat until clear.  Add a little hot mixture to the beaten egg yolks.  Return to hot mixture and cook about 5 minutes longer.  Remove from heat.  Blend in lemon juice, butter or margarine.  Pour into baked pie shell.  Be sure filling and shell are both hot or both cold.  Cover filling with meringue.  Bake in 350 degree oven until lightly browned.

Southern Fried Chicken

Salt and Pepper                                                  2 Cups Self-Rising Flour
Vegetable Shortening                                       1 Teaspoon Black Pepper
3 Eggs                                                                   2 1/2 lb. Chicken Cut Up
1/3 Cup Water

Season chicken and place in refrigerator for approximately 2 - 3 hours, then remove chicken.  Heat shortening to 350 degrees.  Beat eggs with water in a small bowl.  In a shallow bowl, season flour with pepper.  Dip chicken pieces in egg mixture and then coat well with flour mixture.  Carefully add to hot shortening, in small amounts if necessary.  Place lid on top of skillet and fry until brown and crisp.  Dark meat requires approximately 13 - 14 minutes cooking time compared to only 8 - 10 minutes cooking time for white meat.

Cherry Coke Salad

1 Can Pie Cherries                                        1 Small Bottle of 3/4 Cup Coke
1/2 Cup Water                                                 3/4 Cup Chopped Nuts or Celery
1 Cup Sugar                                                    1 Small Can Crushed Pineapple
2 Boxes Cherry Jello                                     A Few Drops Red Food Coloring

Bring cherries, water, and sugar to a boil in saucepan.  Add jello and food coloring, then let cool.  Add coke, pineapple and nuts (or celery).  Chill until firm like jello.

Hushpuppie Heaven

1/2 Cup Chopped Onion                            3 1/2 Teaspoons Baking Powder
3 Eggs                                                             1/2 Teaspoon Salt
2 Cups Cornmeal                                         2 Heaping Tablespoons Sugar
3/4 Cup Flour                                                 1/2 Cup Chopped Onions (optional)
Milk or Beer

Mix ingredients together, add milk or beer to desired consistency (similar to cornbread batter).  Drop into hot oil one small spoonful at a time and cook until golden brown.

Honey Pumpkin Cookies

3/4 Cup Butter                                         1 `1/3 Cup Sugar
1/4 Cup Honey                                        1 Egg
1 Cup Pumpkin                                       1/3 Cup Poppy Seed
3/4 Teaspoon Salt                                  2 1/2 Cup Sifted Flour
1 Teaspoon Milk                                     1 Teaspoon Baking Powder
3/4 Cup Chopped Nuts                         3/4 Cup Chopped Dates

Beat butter, sugar, honey, and egg together.  Then add the other ingredients.  Stir well until mixed.  Drop by teaspoons onto greased cookie sheet.  Bake at 350 degrees for about 15 minutes or until brown.  Cool and frost.


Frosting

2 Cups Powdered Sugar                          1 Teaspoon Vanilla
3 Ounces Cream Cheese, Softened      1/2 Stick Butter
2 Tablespoons Coffee Cream

Cream ingredients together in mixer until fluffy.  More cream may be added for easier spreading on cookies.  Makes about 4 dozen cookies.

Marinated Vegetables Italian


1/2 Head Cauliflower, Broken into Flowerets             
4 Carrots, Sliced                                                                  1 Cup Pitted Ripe Olives
2 Stalks Celery, Cut into 2 in. Sticks                               3/4 Cup White Vinegar
1 Green Pepper, Cut into 3/4 in Squares                       1/2 Cup Olive Oil
1/2 lb. Medium-sized Fresh Mushrooms                       1/4 Cup Water
1 (3 oz) Jar Pimiento - Stuffed                                          1 Teaspoon Sugar
1 Cup Pitted Ripe Olives                                                    2 Tablespoons Sugar
                                    1/2 Teaspoon Dried Whole Oregano

Place first 7 ingredients in a 13 x 9 x 2 inch dish and set aside.  Combine vinegar and remaining ingredients in a small saucepan and cook over medium heat, stirring constantly until mixture boils.  Remove from heat and pour over vegetables.  Toss gently to coat.  Cover and chill at least 8 hours, stirring several times.  Drain vegetables and serve in a glass dish or on a lettuce-lined platter with wooden picks.
Makes 15 to 17 appetizer servings.

NOTE:  To make ahead, marinate all vegetables except mushrooms.  Add mushrooms 2 hours before serving.

Blueberry Crunch

1 (#2) Can Crushed Pineapple                                1 Stick Butter, Melted and Poured
           (undrained)                                                                (over cake mix)
3 Cups Blueberries                                                    1/4 Cup Sugar, sprinkled over mix
3/4 Cup Sugar, sprinkle over blueberries            1 Cup Chopped Pecans, sprinkled
1 Pkg Yellow Cake Mix, sprinkled over                           over top.
            pineapple and berries

Butter a 9 x 13 baking pan.  Put in ingredients in the order listed.  DO NOT STIR.  Bake at 350 degrees about 45 minutes.

Lemon Jello Cake

1 Pkg Lemon Jello                                     4 Eggs
1 Cup Hot Water                                         1 Teaspoon Lemon Flavoring
1 Box Duncan Hines Lemon Cake        3/4 Cup Oil

Glaza:  Juice of lemon                              3/4 Cup Sugar

Mix lemon jello and water hot enough to dissolve and set aside to cool.  Mix all cake ingredients and pour into a tube pan.  Bake at 350 degrees for one hour.

Glaze:  Mix juice of lemon and sugar and bring to boil.  Pour over cake as soon as possible, while it is still hot.
